The ever changing food revolution bears glad tidings for us ghee lovers. With these new diets proclaiming that it is actually good to cook with ghee, we can proudly brandish our traditional ghee saturated dishes, namely the Mangalorean Ghee Roast.
Ghee Roast, as you may have surmised from the name is essentially a chicken or seafood dish cooked with various spices in ghee. The aroma is enough to make ones mouth water.
While I would love to attribute the deliciousness to the ghee alone, the real flavour comes from the masala, which is a spicy combination of chillies, pepper, coriander, cumin, fenugreek seeds, garlic and tamarind ground together to a fine paste.
